3. Introduction to Galbijjim

Galbi
refers to beef or pork short ribs and Galbijjim refers to the ribs
marinated with soy sauce and braised for a long time. Beef ribs are
expensive so it is a feat food for special occasions such as national
holidays, weddings or birthdays.
Galbijjim was originated in Joseon Dynasty era that the King used to enjoy. It was introduced to people as the cook who used to prepare food for the King started to run a restaurant when he left the palace in 1907. It was sold at a nicest Korean food restaurant that only rich people could afford whilst most people used pork meat instead. Even today, beef Galbijjim is quite expensive.
