This restaurant is the Goyang branch of the 40-year-old buckwheat noodles restaurant headquartered in Seoul. Buckwheat is a native ingredient in Korea widely used in noodles, muk (jelly), and pancakes. The Korean Peninsula was not suited to harvesting wheat, and thus wheat output was extremely small. Before wheat was imported massively from the U.S. from the time of the Korean War, buckwheat served the role of wheat and became a popular native food in Korea in forms such as buckwheat noodles, buckwheat jelly, and buckwheat pancakes.
Soba noodles in Japan are very similar to buckwheat noodles. Buckwheat has low glutinosity, and noodles are made by adding 20-30% of flour. The noodles at Bongpyeong Memil Makguksu Ilsan Branch are chewy and yet contain the savory flavor of buckwheat. They are so famous that visitors are lining up in front of the restaurant to try them.
