What is the image of Japanese ramen? In fact, the characteristics and ingredients of Japanese ramen vary from region to region. Among them, the most familiar thing to us is tonkotsu ramen with the savory and thick pork stock. But there's another popular ramen, shoyu ramen that has cleaner taste. Take a short walk from Sang-su Station, near Hongdae then you will find a quiet alley. Originally, there was 'Ramen Truck' that selling original ramen, but it was so popular and they moved to right next to this store with the name of 'Ramen Truck Lab'. You can also order ramen for delivery, so people living nearby can enjoy it at home.

As you can see those chairs on the outside, it's a restaurant where you have to wait in line for dinner or on weekends. The space in the store is also small.

There's an ordering kiosk. I ordered each of shoyu ramen pro and most popular one, basic to feel the difference between them. Also, I ordered handmade gyoja(dumpling) and butter-rare chashu-don as recommended.

It's a notice about operating hours, holidays and stuffs. There's a hair tie next to it. If you have long hair, you can tie it up to not get your hair wet.

There are only a couple of these 2-person tables, so if you are more than three people, you have to sit side by side at the bar table.

The ramen on the top is pro, and the bottom is basic. I could hardly see the difference.

The difference is the soup. While the basic taste emphasizes the nice and hot taste with seafood and chicken stock, pro has a strong taste and it's close to Japanese original taste. I think lite ramen would be good for those who eat a little bland, and the most people would be satisfied with the basic ramen.

The noodles are chewy medium-thick, and have enough soup seep into the noodle, so it has rich and savory taste. If you eat the soup with the chashu(grilled pork) in ramen, you can taste the strong and deep flavor.

This is mini-butter-rare chashu-don. It's for those rice people and it has different charm to ramen. Finely chopped fire-flavored chashu with pickled ginger, shichimi(a common Japanese spice mixture containing seven ingredient) and butter scent are making a good combination. The price is reasonable, so I recommend it!

There are so many good restaurants around Hongdae, and among them, Ramen Truck Shoyu Ramen has been loved for a long time.
