Even though Anui-myeon of Hamyang is a small district, it was a large city in the Joseon dynasty period. Moreover, it was the transport center which was the boundary of northwest Yeongnam. So big five-day interval village market had been held in Anui until 1970s. There was a cattle market with a slaughter house. Anui-myeon of Hamyang has been famous for beef foods for a long time because it has supplied beef.
Since people became rich these days, they usually eat “Anui braised short ribs”. But “short rib soup” was popular all around the country in the past. I headed to Anui to have short rib soup.

Eight
restaurants which sell short rib soup and braised short ribs are
lining up in Gwangpungno of Anui-myeon.
Hamyang-gun plans to make this road to the road of short rib soup
from this year. “Anui Wonjo Galbee restaurant” is the original
short rib soup restaurant among the eight restaurants.

Anui
Wonjo Galbee restaurant was open 40 years ago. The restaurant
building was originally a tile-roofed house, but modern detached
house has been built recently.

The
building is an old house with 40 years of tradition. The clean hanok
and an old tree are so impressive.

Braised
short ribs and short rib soup are the main menus. Braised short ribs
have a funny story. The governor of Geochang visited Hamyang and ate
braised short ribs every day 30 years ago. The citizens of Geochang
who were angry about him defeated him. So many people those who were
wondered about the taste of braised short rib visited Anui to have
it. However, “short rib soup” has been the representative food of
Anui for a long time. Braised short ribs was expensive for itinerant
vendors and ordinary people. I ordered short rib soup since I am the
ordinary person.

It
takes a long time to make short rib soup, so it should be cooked in
advance. I didn't have to wait for a long time. I was served with
short rib soup, rice, pickled vegetables and Kimchi.

People
usually eat short rib soup with seasoned red-pepper sauce. But this
restaurant serves soy sauce seasoning. It is so rich. I thought it
was salted seafood as it was so well-matured.

The
vegetables seasoned with vinegar and other condiments with
cheonggukjang(fast-fermented bean paste) is the special side dish. It
is spicy, salty and soft. I want to know how to make it.

However,
short rib soup is a little bit more expensive than that of other
regions because it is made of Korean native cattle. All short rib
soups of the restaurants in Anui-myeon are over 10,000 won, and made
of only Korean native cattle.

One
rib and 3~4 lumps of meat are put in short rib soup. I think they
have been chopped well. Delicious short rib soup is made of a large
amount of ribs. Even though it is quite expensive, I think it
deserves the price.

It
was rainy and chilly when I visited the restaurant. So I drank the
hot soup at first. The meat broth was clean, light and aromatic. The
soup was deep and tasty.

But
the meat is not soft. Some restaurants serve soft meat, but this meat
is so chewy. There would be pros and cons. To make soft meat, the
soup should be boiled for a long time. The meat of Anui Wonjo Galbee
is chewy and aromatic.

You would be full after eating away short rib soup with rice and Korean beef. Korean beef is more soft and tasty, less bitter and sour than imported beef. It doesn't matter when making braised short ribs or roasted ribs with strong seasoning. But short rib soup made of Korean beef is perfect. The combination of deep soup and chewy meat is out of this world.
Hamyang-si plans to creat the street of short rib soup in Anui in 2016. So you can take part in various events.
