One hot summer day, I went a long way with the aim of eating delicious bossam(boiled pork eaten with a salty sauce and wrapped in greens). How did the journey end? I seriously thought about moving to this town. Because it was so good! Let me introduce 'Gaya Roast Bossam' which was delicious enough to arouse the will to move close to it.

It's four minute walk from exit 4 of Sangdo station on line 7. It's my first good experience in this neighborhood. I am drooling even at this moment of writing a review.

Actually I like bossam very much. I've never heard of 'Roast' bossam. There is a description of roast bossam in the menu introduction at the entrance. Every day for 27 years, they roast fresh raw meat using radiant heat. It says that this recipe effectively removes pig smell and make it chewy. So, it is a method of cooking for a long time with mild indirect heat, not boiling.

There are plenty of seats in the restaurant. Even though it was early lunchtime, there were quite a few seats left, and filled quickly. I could expect that it would be satisfactory to the taste and the price because there are many middle-aged guests.

Here's the menu. There are smoked jokbal(pig's feet) and roast pork ribs and roast bossam, the signature dish. There is also an affordable table d'hote lunch menu available on weekdays. A glass of soju for dinner, and light meal for lunch.

The combination of savory soybean paste and sweet cabbages... It's a restaurant specializing in bossam, but I can say that they are specialized in the cabbage soup as well. No wonder there was beef bone(and cabbage) soup on the menu. That's why they are good at the soup too.

The main menu does not include rice, so I ordered a bowl of rice separately. Two kinds of side dishes are served with the rice, and those two side dishes are all good. Nice!

I took a bite of the meat with kimchi and, wow! I can only explain it by saying "It melts in my mouth!" The meat holding the juice is like pudding made of meat. The grease spreads out in my mouth at the end, I can't explain with any words. If you are reading this, you may just go eat it. The meat is so great and the kimchi feels relatively normal, but this kimchi is also good comparing to other bossam restaurants.
