3. Introduction to Sundae (Korean sausages)

Sundae is one of the most popular street-foods in Korea. It’s a dark long sausage that’s made of pork intestines stuffed with glass noodles, coagulated pig blood and vegetables that are steamed altogether.

Sundae has been passed down through Mongolia that used to be made by putting meat and blood inside sheep intestines. It’s distributed in Korea when Chingiz Khan brought this convenient food into Korea during the war in Goryo Dynasty era and it became today’s Sundae.







Sundae is made by putting meat, tofu, green bean sprouts, welsh onions, pig blood (seonji), glass noodles and other ingredients into pig intestines, tying both ends and steaming it.

And Sundae that you see easily on the streets is made of pig blood (seonji) and glass noodles put in pig intestines and the price is quite low.

Sundae has soft and deep flavor of original ingredients like tofu and meat when it’s cooked based on original recipe.

And Sundae sold on the streets has only glass noodles and pig blood but it is chewy and has toasted flavor.

The more ingredients are used, the most it costs so Sundae sold on the streets is very cheap that people enjoy it very often.

It’s called Korean sausage because the ingredients are put in animal’s intestines just like sausage in the West.

But Sundae contains so little meat inside and it tastes rather neat and soft because of tofu and vegetables.

Also, sausages contain spices while Sundae doesn’t and that’s why it might smell like pig to some people.

There are some people who are reluctant to eat Sundae because of this smell.

Well-made Sundae does not have smell of pig and it is a good dessert for kids because of its chewy and toasted taste.

Sundae is also easy to access on the street just like Topokki. You will see black long Sundae that looks like a snake near Topokki.

It might look ugly but the taste is not bad at all. Especially it goes so well with spicy Topokki so I want you to try it together.

4. Kinds of Sundae

Sundae is made of different ingredients with pig blood put in pig intestines.
There are Dangmyeon(glass noodles)-, Chapssal(glutinous rice)- and Ojingeo(squid)-sundae depending on ingredients, and there are Baekam-sundae, Byeongcheon-sundae and Abai-sundae depending on recipes in each region.

I’ll introduce you some Sundae you can easily find.

Dangmyeon(glass noodle)-sundae: Pig blood and chewy glass noodles are put in pig intestines

Chapssal(glutinous rice)-sundae: Pig blood, glutinous rice, meat, tofu, green bean sprouts, and welsh onions are put in pig intestines

Ojingeo(squid)-sundae: Tofu, meat and vegetables are put in a squid instead of intestines and pig blood

5. How to enjoy Sundae even more

Sundae goes well with different kinds of sauce because its original taste is quite plain.

The most popular ones are Sundaeguk and Sundae-bokkeum.

Sundaeguk is basically Sundae soup that mostly consists of Sundae, steamed pig intestines stuffed with seasoned, minced vegetables, and rice with soup. Not to mention that the soup tastes so good with chunks of soft meat and chewy Sundae, it is also cheap that why Koreans love it.
Especially when you’re hungover it helps your stomach feel better.
But foreigners who are sensitive to smells might find it difficult to eat because it could smell of pig at some restaurants.

The next popular Sundae cuisine would be Sundae-bokkeum.

It consist of Sundae, perilla leaves, cabbages, rice cake and ramen stir-fried with spicy sauce.
Garlic and ginger are used to get rid of the smell so it does not smell of pig like Sundaeguk.
But! The sauce is quite spicy. And it’s tasty because it uses different ingredients.

You could eat it with Topokki on the street or have Sundaeguk at a restaurant or have some drinks with Sundae-bokkeum. You might as well enjoy different Sundae cuisines.
