3. A Brief Introduction To Soft Tofu Stew 순두부찌개


Jjigae is one of Korean traditional broth, and there are various types of it. In particular, soft tofu stew is popular with foreign tourists.


It is made of soft tofu, vegetable and seafood. It is so soft and aromatic that everyone can enjoy.


Tofu has been handed down since Goryeo dynasty made an exchange with Yuan Dynasty.


In 1434, the early period of the Joseon Dynasty, one court cuisine chef of Joseon made excellent tofu for Chinese king.


Joseon was good at producing tofu. According to references, many people enjoyed tofu and made a variety of food with it.







Soft tofu is a byproduct of tofu, which is produced during the process of making tofu. In order to make tofu, you should grind soaked bean and boil it for a long time. And then, you should separate grounds from soymilk by sifting out.


When you put bittern into soymilk, bean's protein is coagulated and some lump are produced. This is called “soft tofu”. If you put it into a cast and draw off moisture, solid “tofu” is made. Since soft tofu is not drawn off moisture, texture of food is soft. It is aromatic and smells deep. Because it is delicious, some people eat it with soy sauce as it is.

Soft tofu stew, which is a common Korean food, is seasoned with chili pepper. If you make it, you should put clam, pumpkin, mushroom, onion and scallion into seasoned soup. And then apply salt for seasoning, put some soft tofu and boil it for a while.


Even though it is spicy, stew is soft and aromatic. Clams and vegetables are also tasty. Tofu has been usually eaten in East Asia like Korea, China and Japan. Nowadays, however, it is popular with many people around the world due to its taste and nutrition. Most people would only know solid and quadrangle tofu. But if you come to Korea, you must try soft tofu stew which is hot and soft.

4. The Kinds of Soft Tofu Stew


Basically, manila clam, various vegetables like mushroom, pumpkin and onion and hot pepper paste are added in soft tofu stew. But sometimes, other ingredients like squid, shrimp or pork are added. Moreover, you can cook it with soy sauce, which makes natural soft tofu stew.







5. The Way To Enjoy Delicious Soft Tofu Stew


Korean soup is served with rice. Especially, jjigae is delicious when it is hot. Sometimes, a raw egg is added in soft tofu stew. You should break the yolk and stir in hot soup.

And then eat the stew after about two or three minutes. The raw egg is slightly done, so it is more soft and aromatic.
